In this unique workshop, Elmar Bürgy , a gamekeeper for over 30 years and a chef for 15, will show us how to properly butcher and prepare a whole wild boar. We'll learn where the animal comes from , why it was shot , and how sustainable game management works .

Together we will learn how to use different knives and tools correctly, share Elmar's knowledge about meat quality, maturation and preparation - and enjoy a meal together .
